Nutritional Biochemistry 2

Introduction

This lesson covers the basic concepts and biochemistry of micronutrients (vitamins and minerals), and water. It also covers additional integration of metabolism concepts, and nutrient-drug interactions and depletions.

Learning Outcomes

After working through this lesson, the student must improve mastery of the following competencies1:

  1. List micronutrients, their RENI and the role of each, their food sources, bioavailability and cooking/processing stability
  2. Relate deficiency and toxic levels of vitamins, minerals and trace elements to symptoms
  3. Identify drug-nutrient interactions and depletions
  4. Outline the chemical reaction in the body, function and relevance of fluids and electrolytes, explain simple and cellular metabolism: differentiate between anabolic and catabolic reaction
  5. Explain current diet trends in contemporary health settings like alternative medicine, herbalism and dietary supplements, vegetarianism, fruitarianism, functional foods – phytochemicals and food antioxidants and effects in the practice of dietetics.

Activity 1. Study Chapters 8 to 11, and 17 of the Fundamentals in Nutrition and Dietetics. Volume 2. Nutritional Biochemistry and Medical Nutrition Therapy Review Manual. List down your questions or concepts for clarification as you study the lessons. You may supplement your review by consulting reference books.
